Anyone who knows me, knows that I don't cook. Our kitchen belongs to my husband, Joe, and I have no problem with that. I do believe that he missed his calling in life. Joe has the gift of making cooking look easy. He can open our refrigerator and make a gourmet, healthy meal out of whatever he can find. So tonight, he prepared an amazing Vegan Vegetable Lo Mein (for our vegan teenage daughter Catie) and Vegetable Lo Mein with Chicken (prepared for our non- vegan teenage son John, and me). Since I am often asked to share his recipes, here goes...
Ingredients:
1 (8 ounce) package spaghetti cooked
1 red onion
4 leaves of bok choy
2 medium sized carrots
3 tbs virgin coconut oil
3 tbs minced garlic
10 mushrooms diced
1/2 tsp five spice powder
1 cup Yoshida's Cooking Sauce
